Slow down, warm up, and learn the foundations of practical herbal medicine this winter. Curious about herbal medicine, but not sure where to start - or what’s actually worth doing? This beginner-friendly workshop cuts through the noise and focuses on simple, everyday ways to use herbs at home during the colder months. This workshop runs from 1pm-3pm.
Together, we’ll explore the foundations of herbal medicine — how herbs work in the body, how to approach them without overcomplicating things, and how to start using seasonal plants with more confidence. Then we’ll put it into practice!
You’ll make your own herbal vinegar using seasonal, locally relevant herbs and plants — a versatile preparation that can support winter wellness, brighten meals, and become part of your everyday routine.
Throughout the workshop we’ll share warming herbal tonics and winter drinks, with plenty of opportunity to taste, ask questions, and experience herbs in a practical, delicious way.
Designed for the curious, this workshop is about building confidence, not complexity. Think cosy winter vibes, practical herbal knowledge, and reconnecting with the plants growing around us.
All materials provided. No prior experience needed.
Timing
- Welcome and hot tonics (15 minutes)
- A learning session where we run through some basics and provide discussion around foundations of herbal medicine and winter wellness (45 minutes)
- Making sessions (45 minutes)

About Your Facilitator
Rooted in the wild landscapes of Aotearoa, Wild Dispensary is a modern herbal apothecary inspired by the plants, seasons and stories of the South. Founded in Dunedin by a collective of foragers, herbalists, growers and makers, the company creates small-batch botanical remedies that draw from the rugged beauty of New Zealand’s lower South Island.

Their formulations are led by qualified naturopath and medical herbalist Skye Macfarlane, while co-founder Ruth Vaughan brings a strong background in native plants, environmental science and sustainable wild harvesting practices. Together with co-founder Gerald Davies, the trio have shaped Wild Dispensary into a brand that feels both grounded in traditional plant knowledge and deeply connected to contemporary life.
From wild thyme gathered in Central Otago to native kawakawa, horopito and organically cultivated herbs, each ingredient is thoughtfully sourced, sustainably harvested and crafted with care. Their work celebrates the idea that medicine can be found in the landscapes around us — among mountains, coastlines, back gardens and untamed places.
More than a wellness brand, Wild Dispensary feels like an expression of the southern landscape itself — earthy, restorative and quietly powerful. Their ethos centres on slow production, environmental responsibility and community care, with practices including bottle return schemes, waste reduction initiatives and Living Wage certification.
